Opening on 12 October, Chayote promises a culinary voyage like no other, highlighting the unique flavours of modern Mexican, Spanish and Peruvian cuisines. With acclaimed Chef Tomasz Baranski at the helm, the restaurant boasts a prime location, offering breathtaking views of St Katharine Dock’s marina. Motivated by a shared vision, Georgy Vershinin and Susannah Hall, a husband-and-wife duo, founded Chayote with the aim of offering London a high-end dining experience. Their focus is on fusing the finest Latino flavours and textures to create a truly luxurious gastronomic affair.
Georgy and Susannah explain;
“There are a host of messy, brightly-coloured street food Mexicans in London, but few provide a modern, mess-free Mexican dining experience.
So we wanted to open a modern and comfortable Mexican restaurant, with elegance at the core of its food, interiors, wines, cocktails and service. And Chayote was born.”

Taking its name from a popular Mexican gourd, Chayote’s interior design captures the lush, tropical atmosphere of South America through its palette of deep greens, tan browns, and moody blacks, complemented by natural wood and warm, exposed brick.
Elegant statement lighting illuminates the 80-seat restaurant, while luxurious velvets and leathers contribute to a relaxed yet sophisticated dining environment. For those who prefer dining al fresco, Chayote’s terrace offers stunning views of the yacht marina and shimmering waters, all enjoyed under the comfort of heated umbrellas.
The menu at Chayote is a feast for the senses, featuring an inventive array of tostadas, tacos, and quesadillas. Diners can also savour fresh seafood ceviches, such as sea bass paired with green mango, and delectable sharing dishes like Lamb Barbacoa wrapped in Adoba and Banana Leaf or Iberico Pork Carnitas accompanied by Roast Chayote and Red Mole. The dessert offerings continue this theme of culinary innovation, boasting delights like Spicy Chocolate Doughnuts and Chocolate Habanero Tart.
Complementing the food, Chayote’s cocktail menu delves into the restaurant’s Mexican, Peruvian, and Spanish heritage. Curated by Bar Manager Clark Crown, the drinks list features tequila-based beverages like the signature Chayote Margarita and a Carajillo, a warm coffee cocktail. Additionally, the menu offers an array of Mezcal and Pisco-based concoctions, such as a smoky, aromatic Mezcal original and a Mezcal Mule that bursts with fresh ginger, mint, lime, and Indian bitters.
The restaurant’s carefully selected wine list is designed to complement its diverse menu, featuring varieties sourced from Mexican, Spanish, and South American vineyards. This includes an array of grapes such as Tempranillo, Syrah, Nebbiolo, Carignan, and Merlot, along with standout orange wines. In line with a commitment to sustainability, the team has made a concerted effort to offer a majority of wines that are organic, bio-dynamic, and natural.
